A fun variation of this recipe is to “spiralize” the zucchini instead of grating it. The combination of strands of pasta and zucchini have lots of fiber and look so pretty together.
Bring a large pot of salted water to boil. Add pasta and cook according to package directions until al dente.
While pasta is cooking, in a large non-stick pan, heat butter and oil together. Add grated zucchini and cook for about 3 minutes. Add garlic and cook for one more minute, stirring constantly. Add 1/4 cup of grated parmesan cheese.
Place pasta in a large shallow pasta bowl and toss in zucchini mixture. Top with remaining parmesan cheese. Serve
