This satisfying salad can be made with chicken as well. The whole wheat pasta provides some of the fiber needed in the diverticulosis phase.


Ingredients

  • 1/2 Pound
    whole wheat pasta
  • 3/4 Pounds
    medium shrimp, cooked
  • 2 Cups
    fresh spinach
  • Roma tomatoes, seeded and chopped
  • 1/2 Cup
    Ranch salad dressing
  • 4 Tablespoons
    fresh basil, chopped
  • 1/4 Cup
    Parmesan cheese, grated

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain.

  2. While pasta is cooking, in a large bowl, combine shrimp, spinach, tomatoes, salad dressing and cooked pasta.

  3. Refrigerate for 20 minutes. Toss together with basil and cheese. Serve.

    Tried this recipe last night and everyone loved it. Will make it again, and next time I may substitute chicken for shrimp.
