A tasty and quick meal with items usually everyone has on hand.


Ingredients

  • 1 Pound
    whole wheat pasta
  • 2 Tablespoons
    olive oil
  • garlic cloves, minced
  • 3 Cups
    tomatoes, seeded and chopped
  • 14 Ounces
    can,cannellini beans, drained and rinsed
  • 1 Cup
    tomato sauce
  • 2 Cups
    fresh spinach, washed and chopped
  • 1/2 Cup
    Feta cheese, crumbled

Instructions

  1. Bring a large pot of water to a boil. Add salt and add pasta and cook according to package instructions. Drain.

  2. In a large pan, heat olive oil over medium heat. Cook garlic for 3 - 4 minutes. Add tomatoes, beans and tomato sauce. Bring to a boil. Reduce heat, cover and let simmer for 20 minutes.

  3. Add spinach to the sauce and let simmer for another 5 minutes or until spinach wilts. Place cooked pasta in a large serving bowl, pour sauce over pasta and sprinkle feta cheese. Toss to combine. Serve.

    Haven’t tried it yet but am wondering if Sausage is supposed to read Spinach? Sounds yummy either way…

      Hi Mauri,
      Thank you for your comment and a sharp eye. Yes, it should be “spinach” instead of “sausage”, however, Italian turkey sausage or something similar might add an extra layer of flavor.
