This salad is a rounded meal with the fiber, protein, and vegetables.  A high fiber diet is recommended for those with diverticulosis.


Ingredients

  • 1/2 Pound
    whole wheat pasta
  • 1 Cup
    cooked chicken breast, cubed
  • 10 Ounces
    frozed broccoli, thawed and drained
  • 1/2 Cup
    peas, thawed from frozen
  • 1/2 Cup
    Ranch dressing
  • 1 Teaspoon
    Italian seasoning
  • 1 Tablespoon
    Parmesan cheese, grated

Instructions

  1. Bring a large pot of salted water to a boil.

  2. Add pasta and cook according to package instructions until al dente. Drain.

  3. Combine cooked pasta with chicken, broccoli and peas. Set aside.

  4. In a separate bowl, blend together dressing, herbs and cheese.

  5. Pour dressing mixture into pasta and vegetable mixture. Toss well to coat, and serve.

    What is a good substitution for the ranch dressing?

    Mash an avocado and add olive oil, lemon juice if you can have citrus, salt, pepper and balsamic vinegar if you like it. Made that up cuz I can’t have Ranch either. Lactose intolerant.
