This recipe is versatile in that you can substitute chicken for the turkey and you can substitute  any vegetables you have handy. It is an easy one pot meal and so delicious.


Ingredients

  • 1 Pound
    ground turkey
  • 1/2 Teaspoon
    salt
  • small onion, chopped
  • carrots, chopped
  • celery stalks, chopped
  • green bell pepper, seeded and chopped
  • white button mushrooms, quartered
  • 2 1/2 Cups
    chicken broth
  • 1 Cup
    barley
  • 1 Tablespoon
    poultry seasoning
  • bay leaf

Instructions

  1. Preheat oven to 375F degrees.

  2. In a large pan, over medium- high heat, cook ground turkey with salt until browned, about 5 minutes.

  3. Add onions, carrots, celery and green peppers. Cook until tender, about 5 minutes. Add mushrooms, stock, barley, poultry seasoning and bay leaf.

  4. Mix together and place mixture in a 9x13 inch baking dish. Cover and bake in the preheated oven for 1 hour. Serve.
