Spinach and Mushroom Toss

This is a good side dish to have during the holidays or any time of the year.


Ingredients

  • 2 Teaspoons
    olive oil
  • 1/4 Cup
    shallots, minced
  • 3
    garlic cloves, minced
  • 3
    bacon strips, chopped
  • 4 Cups
    white mushrooms, sliced
  • 3 Tablespoons
    balsamic vinegar
  • 1 1/2 Tablespoon
    low sodium soy sauce
  • 20 Ounces
    fresh baby spinach

Instructions

  1. In a large pan, heat olive oil over medium heat. Add shallots and garlic and cook for 1 minute. Add bacon and cook an additional 2-3 minutes, or until browned. Add mushrooms and cook 3 to 5 minutes, until mushrooms are tender. Add balsamic vinegar and soy sauce and bring to a simmer. Add spinach and simmer 1 to 2 minutes, until spinach wilts, turning frequently.
