Spinach and Feta Stuffed Chicken Breast
This recipe is high in protein, and delicious.
Preheat the oven to 375°F (190°C).
Season the chicken breast with salt and pepper.
In a small bowl, mix together the spinach, feta cheese, parsley, and garlic.
Heat the olive oil in a skillet over medium heat. Add the chicken breast and cook for 2-3 minutes per side, or until golden brown.
Transfer the chicken breast to a baking dish and stuff with the spinach and feta mixture.
Bake in the preheated oven for 15-20 minutes, or until cooked through.
Serve with a side of steamed vegetables or a salad.
