An easy recipe that can be served at lunch or dinner, packed with flavor and fiber.


Ingredients

  • 15 Ounces
    black beans, drained and rinsed
  • 1/2 Cup
    red bell pepper, seeded and chopped
  • 3 Tablespoons
    fresh lemon juice
  • 2 Tablespoons
    fersh cilantro, minced
  • 2 Teaspoons
    olive oil
  • chicken breast halves, skinless
  • round whole wheat pita pockets
  • Monterrey Jack cheese, slices

Instructions

  1. In a bowl, combine beans, bell pepper, lime juice, and cilantro. Set aside.

  2. In a large pan, heat canola oil over medium-high heat. Cook chicken in pan until golden brown. Set aside for 10 without cutting.

  3. Warm pita bread in oven. Cut chicken into slices. For each sandwich, place cheese slice halves down center of one pita bread.

  4. Top with chicken breast slices and bean mixture. Roll up tightly. Cut in half and serve.
