This omelet is a great savory breakfast with plenty of fiber.
In a medium bowl, whisk together eggs, milk or water and salt.
Heat butter in a medium skillet and add red beans. Cook for 3 minutes, add tomatoes and green peppers.
Cook for another 5 minutes until vegetables soften. Pour in egg mixture and sprinkle the cheese over the eggs.
Cover until cheese melts. Serve with whole wheat tortillas.
