This is an easy way to prepare a high fiber and savory dish.
In a large non-stick pan, heat olive oil over medium heat. Cook onions, celery and garlic stirring until just tender.
Stir in tomato paste, oregano and thyme. Add beef broth, stir and bring to a boil. Simmer uncovered about 35 minutes or until mixture thickens. Add red beans and let cook until heated through.
Serve over brown rice.
