Easy to make pancakes with ingredients usually on hand.


Ingredients

  • 1 1/2 Cup
    plain yogurt
  • 1/2 Cup
    milk
  • 2
    eggs
  • 3 Tablespoons
    canola oil
  • 1 Cup
    whole wheat flour
  • 1/3 Cup
    flour
  • 1/3 Cup
    quick cooking oats
  • 2 Teaspoons
    baking powder
  • 1/2 Teaspoon
    baking soda
  • Non-stick cooking spray

Instructions

  1. In a medium bowl, combine yogurt, milk, eggs, and oil. Mix well.

  2. In a separate bowl, combine flours, oats, baking powder and soda. Mix well. Add dry ingredients to wet ingredients and mix just to moisten.

  3. Spray a non-stick pan with non-stick cooking spray and heat pan over medium heat. For each pancake, pour slightly less than 1/4 cup batter from cup into hot pan.

  4. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden. Serve pancakes with warm maple syrup and fruit if desired.
