This yummy stew is a great alternative to beef stew and packs a lot of fiber.


Ingredients

  • 1 Tablespoon
    Vegetable oil
  • 1
    Onion, chopped
  • 2
    Garlic cloves, minced
  • 1
    Green bell pepper, seeded, chopped
  • 2 Cups
    Kale, chopped
  • 3 Cups
    Vegetable broth
  • 1 1/4 Cup
    Lentils, uncooked, rinsed
  • 15 Ounces
    Can tomato sauce
  • 1 Tablespoon
    Italian seasoning
  • 1/2 Teaspoon
    Paprika

Instructions

  1. In a large saucepan, heat oil over medium-high heat. Cook onion, garlic, and bell pepper, stirring frequently, until vegetables are tender.

  2. Stir in water, lentils, tomato sauce and spices. Reduce heat to low and partially cover and simmer 35 to 40 minutes or until lentils are tender. Serve.

    Delicious recipe! I only had an 8oz tomato sauce. I added more vegetable broth and it was amazing!! My teen daughter loved it too!
