Beans are one of the highest sources of fiber, needed during diverticulosis.  This soup is high fiber due to the beans and brown rice.


Ingredients

  • 3
    slices bacon
  • 1 Teaspoon
    garlic cloves, minced
  • 2
    shallots, chopped
  • 1
    carrots, chopped
  • 28 Ounces
    kidney beans, drained
  • 1/2 Cup
    quick cooking brown rice
  • 4 Cups
    beef broth
  • 2
    bay leaves
  • 1/4 Teaspoon
    dried basil

Instructions

  1. In a large soup pot, cook bacon over medium heat until crisp. Crumble and set aside.

  2. In the same pan with the bacon oil, cook garlic, shallots and carrots until tender, about 5 minutes.

  3. Place the beans in blender and puree until smooth. Stir into the vegetable mixture in the pan.

  4. Add the bacon, rice, broth, bay leaves and basil. Stir soup and bring pot to a boil.

  5. Reduce heat and simmer covered, until rice is tender, 20 minutes. Serve.

    why does it say to puree the beans. but the picture shows intact beans
