Holiday Stuffing

This holiday stuffing is festive yet has a good amount of fiber provided by the wheat bread and unpeeled apples. Fiber is an important part of preventing diverticulosis.

Preheat oven to 400 degrees. Lay cubed bread on a baking sheet in a single layer and bake, until toasted, about 10 minutes. Allow to cool. While bread is toasting, prepare fruit mixture. Heat butter in a large pan over medium- high heat. Add apples, onion, and celery and cook until softened, about 8-10 minutes. Put mixture in a large bowl and combine with toasted bread, broth, apricots, prunes, parsley and salt. Transfer mixture to a 3-quart baking dish and cover with foil. Bake 20 minutes, remove foil and bake an additional 15 minutes
