An easy way to get meat, vegetables and fiber in a meal.
Prepare steaks for grill by pouring 2 tbs olive oil and salt to taste. Grill over high heat to desired doneness, about 7 minutes per side for medium. Once cooked, place steaks on plate to rest and let juices redistribute without cutting.
To make dressing, in a small bowl, whisk together balsamic vinegar, 2 tbs olive oil and salt and pepper to taste.
On individual plates, stack spinach, apples and steak that have been cut diagonally. Drizzle with dressing and top with Parmesan cheese.
