Garbanzo and Tomato Salad

A Mediterranean inspired salad with a lot of fiber and flavor.  Cannellini beans can be substituted for the garbanzo beans.


Ingredients

  • 4 Ounces
    medium tomatoes, seeded and chopped
  • 28 Ounces
    can garbanzo beans, drained and rinsed
  • 1/4 Cup
    red onion, chopped finely
  • 1 Cup
    Italian parsley, chopped finely
  • 2 Tablespoons
    lemon juice
  • 1/4 Cup
    olive oil
  • 1/2 Teaspoon
    salt
  • 1/4 Teaspoon
    pepper

Instructions

  1. In a large bowl, combine tomatoes, garbanzo beans, onions and fresh parsley. Set aside.

  2. In a separate small bowl whisk together lemon juice, olive oil and salt. Pour dressing over vegetables. Mix and serve.
