Garbanzo Pita Pockets

This will become a go to recipe for a quick and healthy, high fiber snack or lunch that requires no cooking.

In a large bowl, combine the garbanzo beans, artichokes and their liquid, olives, garlic, peppers, onion, vinegar and basil. Mix well and set aside.
Slice pita bread to make a pocket. Place a lettuce leaf in each pita and fill with the garbanzo filling. Serve.
