Fruit Salad with Avocado

This is a sweet and refreshing way to get fiber and vitamins at lunch or as a side salad at dinner.


Ingredients

  • 2
    large avocados, pitted and diced
  • 1
    peach, unpeeled, pitted and diced
  • 1
    apple, unpeeled, cored and diced
  • 1 Cup
    cantaloupe, chopped
  • 1
    shallot, chopped finely
  • 1
    English cucumber, seedless, chopped
  • 1/4 Cup
    fresh lime juice
  • 1/4 Cup
    fresh mint, chopped
  • 8
    large lettuce leaves

Instructions

  1. In a medium bowl, combine all ingredients except the lettuce leaves.

  2. Sprinkle with lime juice and mint and toss together to combine.

  3. Let the salad sit at least 10-20 minutes. Serve over 2 leaves of lettuce per serving.
