Creamy Chickpea Soup

With a few accessible ingredients, you can have a fiber filled and flavorful soup.  Fiber is recommended for those with diverticulosis.


Ingredients

  • 2 1/2 Cups
    vegetable broth
  • 2 Cups
    fresh baby spinach
  • 2 Cups
    tomatoes, seeded and chopped
  • 2 Cups
    hummus, homemade or store bought
  • 1 Tablespoon
    lemon juice

Instructions

  1. In a medium pot, bring vegetable broth to a boil. Add spinach and tomatoes and cook until spinach wilts, about 4 – 5 minutes. Lower heat and stir in the hummus and lemon juice and cook until heated through.
