Ingredients

  • 2 1/2 Cups
    vegetable broth
  • 2 Cups
    fresh baby spinach
  • 2 Cups
    tomatoes, seeded and chopped
  • 2 Cups
    hummus, homemade or store bought
  • 1 Tablespoon
    lemon juice

Instructions

  1. In a medium pot, bring vegetable broth to a boil.

  2. Add spinach and tomatoes and cook until spinach wilts, about 4 – 5 minutes.

  3. Lower heat and stir in the hummus and lemon juice and cook until heated through.

    This was delicious. It didn’t aggravate my stomach at all. My partner who doesn’t like hummus that much ate an entire bowl. This is a keeper recipe. I have already told all my vegetarian friends and they are dying to try it!!!

    It needs some seasoning. Adding some fresh herbs and a little garlic salt will hugely improve the flavor without adding anything Inflammatory to the recipe.

    Does anyone know how much chickpeas you are supposed to add for the recipe doesn’t say.

      The chickpeas are in the prepared hummus. The extra ones on top are more for garnish. Hope you enjoy it.
