Citrus Carrots

This can be served as a side dish or enjoyed as a snack.  The carrots and orange provide some fiber.


Ingredients

  • 1 Pound
    baby carrots
  • 2 Tablespoons
    balsamic vinegar
  • 1/2 Cup
    orange juice
  • 1
    orange, peeled and chopped
  • 1 Tablespoon
    green onions, chopped finely
  • 1 Tablespoon
    fresh dill, chopped

Instructions

  1. Steam carrots in a steamer until tender or plunge carrots into boiling water and cook for about 10 - 12 minutes until tender.
    Drain. Rinse with cold water and drain again.
    In a medium bowl, combine carrots, vinegar and orange juice. Stir to combine. Add orange segments, onions and dill. Lightly toss and serve.
