A colorful and tasty way to get lots of fiber in your diet.  The dressing is filled with lots of fresh flavor.


Ingredients

  • 14 Ounces
    can kidney beans, drained and rinsed
  • 14 Ounces
    can garbanzo beans, drained and rinsed
  • 1
    medium red onion, diced
  • 1
    small red bell pepper, seeded and chopped
  • 1 Cup
    fresh cilantro
  • 1/2 Cup
    balsamic vinegar
  • 1 Tablespoon
    Dijon mustard
  • 1 1/2 Teaspoon
    cumin
  • 3
    garlic cloves
  • 1/2 Teaspoon
    salt
  • 1 1/2 Cup
    olive oil
  • 1/2
    lemon, juiced

Instructions

  1. In a medium bowl, combine beans, onion and bell pepper and set aside.

  2. In a food processor, blend the rest of the ingredients until smooth. Pour half of the dressing over bean mixture and combine.

  3. Refrigerate at least one hour. Pour remaining dressing over salad and mix gently just before serving. Serve at room temperature.
