Chicken and Avocado Pitas

A quick and easy way to get fiber on the go.


  • 2 Cups
    cooked chicken. chopped
  • 1
    avocado, medium, chopped
  • 14 Ounces
    can red beans, drained, rinsed, mashed
  • 1 Teaspoon
    lemon juice
  • 1 Cup
    tomatoes, seeded, chopped
  • 1 Cup
    cottage cheese
  • 4
    whole wheat pita pockets


  1. In a large mixing bowl, combine chicken, avocado, red beans, lemon juice, tomatoes, and cottage cheese. Slice the pita bread to make a pocket and spoon in the chicken mixture. Serve.
