A quick and easy way to get fiber on the go.


Ingredients

  • 2 Cups
    cooked chicken. chopped
  • 1
    avocado, medium, chopped
  • 14 Ounces
    can red beans, drained, rinsed, mashed
  • 1 Teaspoon
    lemon juice
  • 1 Cup
    tomatoes, seeded, chopped
  • 1 Cup
    cottage cheese
  • 4
    whole wheat pita pockets

Instructions

  1. In a large mixing bowl, combine chicken, avocado, red beans, lemon juice, tomatoes, and cottage cheese.

  2. Slice the pita bread to make a pocket and spoon in the chicken mixture. Serve.

    Really nice recipe and I could eat all the ingredients with out worrying about a flare up.

    Looks very good,,,,recently have been diagnosed with diverticulitis and this the first site I have found some really old info,,,I do not have a doctor where I live but emergency hospital said to eat bland ,,,but thank you for all your help,,, I hope I can find this site again,,,,

    I haven’t tried any of your recipes yet but I wanted to know if you could substitute ricotta cheese for the cottage cheese. I am looking forward to trying these recipes.
