This Greek-inspired salad with rice can be served warm or cold and with or without whole wheat pita bread.


Ingredients

  • 1/2 Cup
    Brown rice, cooked
  • 1/2 Cup
    white beans, canned, drained, rinsed
  • 1/2 Cup
    fresh spinach
  • 1/2 Cup
    tomatoes, no seeds
  • 1/2 Cup
    English Cucumber, no seeds
  • 1/4 Cup
    avocado, diced
  • 1 Tablespoon
    red onion, chopped
  • 2 Tablespoons
    Feta cheese, crumbled
  • 2 Tablespoons
    extra virgin olive oil
  • 1 Teaspoon
    red wine vinegar
  • to taste
    salt and pepper

Instructions

  1. In a medium bowl, combine brown rice, beans, spinach, tomatoes, cucumber, avocado, onion, and cheese until combined.

  2. Drizzle oil and vinegar on top and season to taste with salt and pepper and toss together.

  3. Can be served alone or with whole wheat pita bread.
