Brown Rice Greek Salad
This Greek-inspired salad with rice can be served warm or cold and with or without whole wheat pita bread.
In a medium bowl, combine brown rice, beans, spinach, tomatoes, cucumber, avocado, onion, and cheese until combined.
Drizzle oil and vinegar on top and season to taste with salt and pepper and toss together.
Can be served alone or with whole wheat pita bread.
