Bran Muffins

A delicious and convenient way to get lots of fiber in the morning.

Preheat oven to 400F degrees.
Soak 1 cup of All-Bran cereal in 1 cup boiling water and set aside. In a mixer, cream sugar and butter together until well blended. Add eggs, one at a time and beat until fluffy. Add buttermilk and soaked bran mixture.
In a separate bowl, combine flour, baking soda, and salt . Add flour mixture into the batter but do not over mix. Add in remaining 1 cup of cereal, dates and raisins. Pour batter evenly into 10 greased or paper-lined muffin tins.

Heavy filling muffin. Sweetness comes from the raisins and dates. Will definitely make these again.

Can you substitute wheat bran for the bran cereal? If so, would you use the same amount?
