Black Bean Quesadillas

This recipe is so easy and flavorful that it can be made for a snack or a main dish. You can use a regular oven or just a toaster oven.

Preheat oven to 350 degrees.
In a medium pan, heat olive oil over medium heat. Cook onions and red peppers until soft, about 5 minutes. Add garlic and continue to cook another 2 minutes, add mashed beans, cilantro and olives, and cumin and cook another 5 minutes to combine all ingredients.
Spread mixture evenly onto 4 tortillas. Sprinkle with spinach and cheese.
Top with remaining tortillas. Bake tortillas on ungreased cookie sheet for 12 minutes. Cut into wedges and serve.
