This very easy one-pot soup can be made ahead of time and stored, or it can be on the table in less than an hour. In a large soup pot, over medium-high heat, brown ground beef.
Add frozen vegetables, barley, broth, tomatoes, garlic powder, paprika, oregano and bay leaf. Bring the pot to a boil, Reduce heat, cover and simmer for 15 minutes.
Add the potatoes and allow to simmer again for another 20 minutes or until they are tender.
