This very easy one-pot soup can be made ahead of time and stored or it can be on the table in  less than an hour.  This has beef, but can be substituted with turkey or chicken and has lots of fiber, important in the diverticulosis diet.


Ingredients

  • 1/2 Pound
    stew beef, diced
  • 1/2
    bag frozen vegetable medley
  • 1/4 Cup
    barley
  • 32 Ounces
    beef broth
  • 2
    tomatoes, seeded and chopped
  • 1 Teaspoon
    garlic powder
  • 1 Teaspoon
    paprika
  • 1 Teaspoon
    oregano
  • 1
    bay leaf
  • 1
    yellow or red potato, chopped

Instructions

  1. In a large soup pot, over medium-high heat, brown ground beef. Add frozen vegetables, barley, broth, tomatoes, garlic powder, paprika, oregano and bay leaf. Bring the pot to a boil, Reduce heat, cover and simmer for 15 minutes. Add the potatoes and allow to simmer again for another 20 minutes or until they are tender.
