A fresh and easy to make salad for the holidays or any time of the year.  The beans provide fiber and creaminess and the tomatoes add a fresh touch.  Beans are one of the best sources of fiber, needed for diverticulosis.


Ingredients

  • 28 Ounces
    white beans, drained and rinsed
  • 2 Cups
    green beans, cut into 1 inch pieces
  • 2 Cups
    tomatoes, seeded and chopped
  • 1/2 Cup
    Italian dressing
  • 2 Tablespoons
    fresh basil, chopped
  • 2 Tablespoons
    Parmesan cheese, grated

Instructions

  1. In a medium serving bowl, combine first four ingredients together. Garnish with basil and cheese. Can be served with whole wheat pita bread triangles.
