The use of fresh herbs gives this easy high fiber dish lots of flavor.
In a large pan, heat olive oil over medium-high heat. Cook onion, carrot and pepper until softened, about 5-7 minutes.
Add garlic and cook for one more minute. Add basil, oregano, sage and rice. Stir to combine.
Stir in broth. Bring to a boil, stirring occasionally. Add lentils. Cover and reduce heat to low and let simmer for 20-25 minutes.
Fluff with fork and serve.
