Aromatic Rice with Lentils

The use of fresh herbs gives this easy high fiber dish lots of flavor.


Ingredients

  • 2 Tablespoons
    olive oil
  • 1
    onion, chopped
  • 2
    carrots, chopped
  • 1
    red bell pepper, seeded and chopped
  • 2
    garlic cloves, minced
  • 1 Tablespoon
    fresh basil, chopped
  • 1 Tablespoon
    fresh oregano, chopped
  • 1/2 Tablespoon
    fresh sage, chopped
  • 1 Cup
    brown rice
  • 3 Cups
    chicken broth
  • 1 Cup
    lentils, uncooked and rinsed

Instructions

  1. In a large pan, heat olive oil over medium-high heat. Cook onion, carrot and pepper until softened, about 5-7 minutes. Add garlic and cook for one more minute. Add basil, oregano, sage and rice. Stir to combine. Stir in broth. Bring to a boil, stirring occasionally. Add lentils. Cover and reduce heat to low and let simmer for 20-25 minutes. Fluff with fork and serve.
