This satisfying salad can be made with chicken as well. The whole wheat pasta provides some of the fiber needed in the diverticulosis phase.

Tried this recipe last night and everyone loved it. Will make it again, and next time I may substitute chicken for shrimp.

How are you cooking your shrimp, tomatoes and spinach?

The shrimp can be grilled, boiled or sautéed. If you’re in a hurry, you can buy pre-cooked shrimp at the store. This is a salad, so the tomatoes and the spinach are not cooked for this recipe.
