Red Beans and Pickle Salad

Serves 4

A simple, tasty salad or relish with lots of fiber and flavor.


  • 28 Ounces
    red beans, drained and rinsed
  • 1/4 Cup
    water chestnuts, drained and chopped
  • red onion, chopped
  • 1/4 Cup
    pickles, sliced
  • 1/2 Cup
    olive oil
  • 1/4 Cup
    balsamic vinegar
  • 1/4 Teaspoon


  1. In a medium bowl, combine red beans, water chestnuts, onion, and pickles. Set aside. In a small bowl, whisk together the olive oil, vinegar and salt. Pour over bean mix and serve.
