A classic bean salad with plenty of fiber which is good for diverticulosis and a twist of flavor with the artichokes.


Ingredients

  • 15 Ounces
    green beans, drained and rinsed
  • 15 Ounces
    wax beans, drained and rinsed
  • 15 Ounces
    kidney beans, drained and rinsed
  • 15 Ounces
    garbanzo beans, drained and rinsed
  • 1/4 Cup
    red onion, chopped
  • 8 Ounces
    artichokes, marinated, chopped
  • 1/4 Cup
    fresh orange juice
  • 1/2 Cup
    cider vinegar
  • 1/2 Cup
    olive oil

Instructions

  1. In a large serving bowl, combine all of the beans, onion, and artichokes.

  2. In a separate small bowl, mix together the juice and vinegar and olive oil.

  3. Pour dressing over bean mixture. Stir to coat. Let marinate in refrigerator for 30 minutes prior to serving.
