Black beans are an excellent source of fiber, needed in the diverticulosis diet.  The fresh mango and herbs provide flavor and freshness.


Ingredients

  • 28 Ounces
    black beans, drained and rinsed
  • 4
    medium mangoes, peeled and diced
  • 1 Cup
    fresh Italian parsley, chopped
  • 2
    small scallions, chopped finely
  • 2
    medium red peppers, seeded and diced
  • 2 Tablespoons
    olive oil
  • 1/2 Cup
    balsamic vinegar
  • 1/4 Teaspoon
    salt

Instructions

  1. In a large salad bowl, combine beans with mangoes, parsley, scallions, and red bell peppers.

  2. In a separate small bowl, whisk together the oil, vinegar and salt. Pour over vegetables and mix well. Serve.
