Bean and Couscous Salad

A great way to get lots of fiber which is recommended with diverticulosis.


Ingredients

  • 1 Cup
    couscous
  • 1 1/2 Cup
    boiling water
  • 1 Cup
    yellow bell peppers, seeded and chopped
  • 2 Cups
    cooked black beans
  • 1
    small onion, chopped
  • 2 Cups
    tomatoes, seeded and chopped
  • 2
    garlic cloves, minced
  • 1/2 Cup
    rice vinegar
  • 1/4 Cup
    olive oil
  • 1/2 Teaspoon
    salt
  • 1/4 Teaspoon
    pepper

Instructions

  1. In a large bowl, place the couscous with boiling water.

  2. Cover and wait until the couscous has absorbed all the water.

  3. Add the remaining ingredients. Mix well and season with salt and pepper. Serve.
