Baked Artichoke Dip
An easy to make warm dip that can be prepared ahead of time. The beans and artichokes provide fiber in this yummy dip.
Heat oven to 350ºF. Mix artichokes, beans, mayonnaise, Greek yogurt, and Parmesan cheese. Stir in spinach and bell pepper.
Spoon mixture into 1-quart casserole. Sprinkle with Mozzarella cheese.
Cover and bake about 20 minutes or until cheese is melted. Serve warm with vegetables or whole wheat baguette slices.
