Baked Artichoke Dip

Baked Artichoke Dip

An easy to make warm dip that can be prepared ahead of time.  The beans and artichokes provide fiber in this yummy dip.


Ingredients

  • 14 Ounces
    artichokes, drained and chopped
  • 14 Ounces
    cannellini beans, drained and rinsed
  • 1/2 Cup
    mayonnaise
  • 1/2 Cup
    plain Greek yogurt
  • 1 Cup
    Parmesan cheese, grated
  • 10 Ounces
    frozen spinach, thawed and chopped
  • 1/2 Cup
    red bell pepper, seeded and chopped
  • 1/4 Cup
    Mozzarella cheese, shredded

Instructions

  1. Heat oven to 350ºF. Mix artichokes, beans, mayonnaise, Greek yogurt, and Parmesan cheese. Stir in spinach and bell pepper.
    Spoon mixture into 1-quart casserole. Sprinkle with Mozzarella cheese.
    Cover and bake about 20 minutes or until cheese is melted. Serve warm with vegetables or whole wheat baguette slices.
