This omelet is a great savory breakfast with plenty of fiber.


Ingredients

  • 4
    eggs
  • 2 Tablespoons
    milk or water
  • 1/4 Teaspoon
    salt
  • 1 1/2 Tablespoon
    butter
  • 1/2 Cup
    red beans, drained, rinsed
  • 1
    tomato, seeded, chopped
  • 1/2 Cup
    green bell pepper, seeded, chopped
  • 2 Tablespoons
    cheddar cheese, grated
  • 2 Pieces
    whole wheat tortillas

Instructions

  1. In a medium bowl, whisk together eggs, milk or water and salt.

  2. Heat butter in a medium skillet and add red beans. Cook for 3 minutes, add tomatoes and green peppers.

  3. Cook for another 5 minutes until vegetables soften. Pour in egg mixture and sprinkle the cheese over the eggs.

  4. Cover until cheese melts. Serve with whole wheat tortillas.
