Spinach and Mushroom Toss

This is a good side dish to have during the holidays or any time of the year.

Instructions
In a large pan, heat olive oil over medium heat. Add shallots and garlic and cook for 1 minute. Add bacon and cook an additional 2-3 minutes, or until browned. Add mushrooms and cook 3 to 5 minutes, until mushrooms are tender. Add balsamic vinegar and soy sauce and bring to a simmer. Add spinach and simmer 1 to 2 minutes, until spinach wilts, turning frequently.
