Oatmeal Pumpkin Raisin Pancakes

Easy to make pancakes with loads of fiber and a little sweetness with the fruit.


Ingredients

  • 1 1/2 Cup
    rolled oats
  • 1/2 Cup
    whole wheat flour
  • 1 Tablespoon
    baking powder
  • 1 Teaspoon
    cinnamon
  • 1 Teaspoon
    nutmeg
  • 1
    egg
  • 1
    banana, mashed
  • 1 Tablespoon
    honey
  • 1/2 Cup
    pumpkin puree, canned
  • 1 1/2 Cup
    milk
  • 1/2 Cup
    seedless raisins
  • Non-stick cooking spray

Instructions

  1. In a large bowl mix together oats, whole wheat flour, baking powder, cinnamon, and nutmeg. Set aside.

  2. In a separate bowl, mix together egg, banana, honey, pumpkin puree, milk and raisins or dates. Mix dry mixture into wet mixture.

  3. Heat griddle or skillet over medium heat. Spray with non-stick cooking spray.

  4. For each pancake, pour slightly less than 1/4 cup batter from cup into hot griddle or pan. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden.

    Good. They cook really fast. I think the spray blackens them. The taste is ok. I used agave syrup instead of honey. Your thoughts?
