A healthy lentil salad packed with flavor and protein! Perfect for quick lunches or snacks. (Pictured with optional caramelized onions)


  • 15 Ounces
    Can Lentils
  • 1.5 Cup
    Cherry Tomatoes
  • 1/4 Cup
    White Wine Vinegar
  • 1/8 Cup
    Chives (optional)


  1. Drain and rinse the lentils. Cut cherry tomatoes in half. Slice optional chives.

  2. Add all ingredients to a bowl and toss to fully combine. Add salt and adjust vinegar to your taste.

  3. Serve immediately or refrigerate in a covered container to let flavors develop more. Optional additions: olive oil, basil, parsley
