Lentil Tomato Salad
Serves 4 People
A healthy lentil salad packed with flavor and protein! Perfect for quick lunches or snacks. (Pictured with optional caramelized onions)
Drain and rinse the lentils. Cut cherry tomatoes in half. Slice optional chives.
Add all ingredients to a bowl and toss to fully combine. Add salt and adjust vinegar to your taste.
Serve immediately or refrigerate in a covered container to let flavors develop more. Optional additions: olive oil, basil, parsley
