This twist to traditional salsa adds fiber from the beans and yellow pepper. Tastes better if allowed to sit for about 30 minutes.


Ingredients

  • 14 Ounces
    red kidney beans, drained and rinsed
  • 2
    tomatoes, seeded and chopped
  • 1
    yellow bell pepper, seeded and chopped
  • 1
    avocado, chopped
  • 1 Tablespoon
    cilantro, chopped
  • 2 Tablespoons
    lime juice
  • 1/4 Teaspoon
    salt

Instructions

  1. In large bowl, mix all ingredients until combined well.
    Serve with warm tortillas or whole wheat chips.

    The only thing I would change is adding only 1 tomato and 2 avocados. This was so refreshing and tasty!!! Will definitely be making this again.
