Ingredients

  • 2 Tablespoons
    plain yogurt
  • 3 Tablespoons
    olive oil
  • 2 Tablespoons
    fresh lemon juice
  • 3/4 Teaspoons
    oregano
  • 1 Tablespoon
    fresh mint, chopped
  • 28 Ounces
    white cannellini beans, drained and rinsed
  • 1/2 Cup
    red onion, chopped finely
  • 3
    medium tomatoes, seeded and chopped
  • 1/4 Cup
    Greek olives, pitted
  • 1/2 Cup
    feta cheese,crumbled
  • 2 Cups
    fresh spinach leaves, torn

Instructions

  1. In large bowl, combine yogurt, olive oil, lemon juice, oregano, and mint ; whisk well.

  2. Add beans, onion, tomato, olives and feta cheese; toss lightly.

  3. Refrigerate for at least one hour. Serve on a bed of spinach.
