Greek Lettuce Wraps

A quick and easy snack to pull together and still get some fiber.


Ingredients

  • 1/4 Cup
    mayonnaise
  • 2 Teaspoons
    lemon juice
  • 1/2 Cup
    white beans, drained and rinsed
  • 1/3 Cup
    feta cheese,crumbled
  • 2 Tablespoons
    pimentos, chopped
  • 8
    large lettuce leaves
  • 1/2 Pound
    cooked chicken breast, cubed

Instructions

  1. In a medium bowl, combine mayonnaise and lemon juice. Stir in beans, mashing slightly with fork. Add cheese and pimentos, and mix lightly. Spread lettuce leaves evenly with bean mixture.
    Top with chicken; roll up. Serve.
