This chili is delicious and loaded with fiber and Southwest flavor.
In a large non-stick pan, heat olive oil over medium heat.
Add onions and garlic and cook 5 minutes or until they are soft. Add chipotle powder, cumin, salt, beans, and tomatoes bring to a boil.
Reduce heat, cover and simmer 15-25 or until chili thickens.
Garnish with fresh cilantro.
