Ingredients

    Olive oil
  • 1
    Medium onion, chopped
  • 1
    Medium butternut squash, peeled and cubed
  • 1
    Medium apple, peeled, cored, and chopped
  • 4 Cups
    Low-sodium vegetable broth
  • 1/2 Teaspoon
    Ground cinnamon
  • Salt to taste

Instructions

  1. Heat oil in a large pot. Add onion; cook 3–4 minutes until soft.

  2. Add squash, apple, broth, and cinnamon. Bring to a boil, then reduce heat and simmer 25 minutes.

  3. Blend until smooth and creamy.

  4. Add salt if desired and serve warm.
