A great alternative to plain scrambled eggs, and the broccoli adds more fiber.


Ingredients

  • 8
    eggs
  • 4 Tablespoons
    milk
  • 1/2 Teaspoon
    salt
  • 1 1/2 Tablespoon
    extra virgin olive oil
  • 1/2
    onion, chopped
  • 1 Cup
    broccoli, fresh or frozen and thawed
  • 1/2 Cup
    Monterrey Jack cheese, shredded

Instructions

  1. In a bowl, whisk together eggs, milk and salt.

  2. Heat olive oil in a medium skillet over medium-high heat, add onion and broccoli and cook until tender, about 7 minutes. Add the egg mixture, stirring to cook eggs evenly.

  3. Sprinkle with cheese. Lower heat and cover until cheese melts. Flip over in half and serve.
