A great alternative to plain scrambled eggs, and the broccoli adds more fiber.
In a bowl, whisk together eggs, milk and salt.
Heat olive oil in a medium skillet over medium-high heat, add onion and broccoli and cook until tender, about 7 minutes. Add the egg mixture, stirring to cook eggs evenly.
Sprinkle with cheese. Lower heat and cover until cheese melts. Flip over in half and serve.
