These muffins provide a good amount of fiber, necessary in the diverticulosis diet.


Ingredients

  • 1 1/2 Cup
    All-Bran cereal
  • 2/3 Cups
    milk
  • 4
    eggs
  • 1/4 Cup
    canola oil
  • 1 Cup
    ripe banana, mashed (about 2 bananas)
  • 1/2 Cup
    brown sugar
  • 1 Cup
    whole wheat flour
  • 2 Teaspoons
    baking powder
  • 1/2 Teaspoon
    salt

Instructions

  1. Preheat oven to 400F degrees.

  2. In a large bowl, combine All-Bran cereal and milk and set aside. Add eggs and oil; stir in mashed banana and brown sugar and combine well.

  3. In a separate small bowl, combine flour, baking powder and salt. Add dry ingredients to banana mixture, stirring just until combined.

  4. Pour batter evenly into 12 greased or paper-lined muffin tins; Bake 15 to 18 minutes or until golden-brown and firm. Allow to cool prior to serving.

    A very tasty muffin. moist without being mushy and not too dry. Adding a little cinnamon would give it a bit of a zip, and if you wanted a bit more sweetness you could add chocolate chips. Hoping my mom likes them.

    Really good muffins, nice and moist. Had to get creative though because I only had half cup of banana so I substituted with a half cup of applesauce. Still taste great.
    Looking forward to trying more recipes.

    My son (6) love these. I subbed Almond milk, Olive oil and coconut sugar, plus added 1/4 cup of chocolate chips.
