Asparagus and Bean Frittata

Preheat oven to 350 degrees.
In a large oven-proof pan, heat 1 tbsp olive oil over medium-high heat. Cook onions, red peppers, garlic, and red beans until vegetables are soft (about 10 minutes). Set aside.
In medium bowl, beat eggs and salt, then add asparagus; set aside.
Add remaining 1 tbsp olive oil into the vegetable pan and pour in the egg mixture. Reduce heat to medium-low and cook for 10 to 15 minutes, or until mixture is set on bottom and lightly browned.Sprinkle Parmesan cheese over top of mixture and broil in the oven for an additional 3 to 5 minutes or until cheese is lightly browned and eggs are cooked through.
