Carrot, Ginger, and Turmeric Soup

Instructions
Heat olive oil in a pot. Add onion and sauté until softened, about 5 minutes.
Add carrots, ginger, turmeric, and broth. Bring to a boil.
Lower heat and simmer for 20 minutes, until carrots are tender.
Blend until smooth and creamy.
Add a pinch of salt, stir, and serve hot.
