Ingredients

  • 1 Tablespoon
    Olive oil
  • 1
    Medium onion, chopped
  • 5
    Medium carrots, peeled and chopped
  • 1 Teaspoon
    Fresh grated ginger (or 1/2 tsp powdered)
  • 1/2 Teaspoon
    Ground turmeric
  • 4 Cups
    Low-sodium vegetable broth
  • Salt to taste

Instructions

  1. Heat olive oil in a pot. Add onion and sauté until softened, about 5 minutes.

  2. Add carrots, ginger, turmeric, and broth. Bring to a boil.

  3. Lower heat and simmer for 20 minutes, until carrots are tender.

  4. Blend until smooth and creamy.

  5. Add a pinch of salt, stir, and serve hot.
