Sweet potatoes are usually a holiday favorite and this recipe will not disappoint.  The freshness of the orange juice and lemon zest give a fresh twist. Sweet potatoes are naturally high in fiber, so it is a recommended food for diverticulosis.

Ingredients

  • 4 Pounds
    sweet potatoes, peeled and cut into large bite size pieces
  • 2 Cups
    orange juice
  • 1/2 Cup
    honey
  • 1 Teaspoon
    cinnamon
  • 1 Teaspoon
    nutmeg
  • 2 Tablespoons
    vanilla extract
  • 2 Teaspoons
    lemon zest
  • 2 Tablespoons
    flour
  • 1/2 Cup
    brown sugar

Instructions

  1. Preheat oven to 350 degrees. Boil sweet potatoes until slightly underdone. Drain, cool and set aside. In a large bowl, whisk together orange juice, cinnamon, nutmeg, vanilla and zest. In another bowl, combine flour and both sugar together. Put cooled sweet potatoes in a deep baking dish, add dry ingredient mixture and stir to coat. Pour liquid over sweet potatoes and bake for 20 to 25 minutes.

    I have not made this dish because the directions say both sugar with the flour and there is only brown sugar listed in the recipe that I read.

    A very tasty side dish that complimented the roasted chicken I made for the family. Everyone loved it.

    Amended the order of the recipe. Mix all dry ingredients. Warm up the orange juice and honey so the honey blends into the liquid. Add vanilla. Pour over parboil potatoes.

    I made this for my brother in law who was recently diagnosed with diverticulosis. Main thing was he loved it. Bonus, we loved it two. I think in the directions it says both sugar, but clearly it should have been brown sugar. Definitely will make this again.
