Mixed Bean Salad

A classic bean salad with plenty of fiber which is good for diverticulosis and a twist of flavor with the artichokes.
Ingredients
Instructions
In a large serving bowl, combine all of the beans, onion, and artichokes.
In a separate small bowl, mix together the juice and vinegar and olive oil.
Pour dressing over bean mixture. Stir to coat. Let marinate in refrigerator for 30 minutes prior to serving.
