You can adjust the amount of spice depending on the curry and there is a double dose of carrot flavor in this yummy soup.


Ingredients

  • 2 Tablespoons
    olive oil
  • 4 Cups
    carrots, chopped
  • 1
    onion, chopped
  • 3
    garlic cloves, minced
  • 1 Tablespoon
    curry powder
  • 3 Cups
    chicken broth
  • 1 1/2 Cup
    carrot juice

Instructions

  1. In a large soup pot, heat oil over medium heat.

  2. Add carrots and onion and continue to cook for about 6-8 minutes. Add garlic and curry powder and cook for another minute.

  3. Next, add broth and 1/2 tsp salt and simmer over low heat. Cover and let simmer for about 15 minutes.

  4. Add carrot juice and mix well. Puree the soup in a blender, working in batches. Return the soup to the pan and season with salt and pepper. Serve.
    Note: for a richer texture, some cream can be mixed in.

    This sounds delicious . I’ve never been able to make a good chicken and dumplings soo !! I hope I have good results with this recipe. I’ll be back to let you know . But it’s usually ME!!! Lol

    Tastes great! I added a cup of thinly chopped Celery to mine, added it in with carrots and onions.
